Shufra di Shufra – Extra Virgin Olive Oil from a Family-Owned Farm in Fermo, Italy.
Produced in our state-of-the-art olive oil mill in Fermo, in the heart of La Marche. An Italian gem hidden among the ancient hill towns, overlooking the pristine Sibillini Mountains.
The olive oil of the La Marche region has been renowned for centuries for its unique flavour and aroma. Venetian merchants purchased the “olio de Marchia” and sold it throughout Europe. Even today, this oil attracts connoisseurs, thanks to its delicate balance of fruity tones, delicate texture and spicy/bitter touches.
Out of respect for the traditions, culture and soil of this region, we grow only local varieties in our orchard: they are a combination of lecce di corno, nostrali di rigori, ascolani tenero and other local varieties, which are planted in the mountain soil and thrive in the cool climate of our region. This combination, along with local knowledge passed down from generation to generation, helps maintain high levels of polyphenols, and ensures low acidity - less than 0.3%. This results in a rich oil that is appreciated by lovers of great olive oil.
Our harvest begins at the end of September, when the olives are green and beginning to change color. We grow them using natural methods, without chemicals, and the fruit is picked at dawn and pressed within a few hours, to maintain superior quality.
After pressing, a pure, high-quality olive oil is obtained. We pour it into ceramic bottles, which protect it from light and heat and ensure it has an optimal temperature.
Flavour profile: Complex aromas of green almonds, vine tomatoes and fresh grass, which develop into a rich and fruity flavour with hints of wild artichoke.
