What makes an olive oil “extra virgin”?
Extra virgin olive oil comes from the first pressing of the fruit and must meet strict standards for flavour, aroma and acidity. It’s produced without heat or chemicals, so the oil keeps more of its natural antioxidants.
What should olive oil taste like?
Flavour depends on the variety and when the olives were picked. Early-harvest oils often taste fresh and green, with notes like almond, tomato or grass and a gentle peppery finish. These natural flavours are a sign of quality.
What does ‘acidity’ mean in olive oil?
Acidity isn’t something you taste. It’s a measure of the oil’s quality and freshness. Lower acidity usually means the olives were healthy and pressed quickly. Our oil is naturally low in acidity (less than 0.4 percent when bottled).
What are polyphenols and why do they matter?
Polyphenols are natural antioxidants that play a role in both flavour and health benefits. They contribute to the peppery, slightly bitter notes typical of high-quality oil. Early harvesting and fast pressing help preserve these compounds.
Why do you harvest at dawn?
Olives start to lose freshness once picked. Harvesting early in the day and pressing within hours protects the fruit from heat and oxidation, keeping the oil bright, clean and full of character.
What varieties of olive trees do you grow?
Le Marche has its own olive varieties, including Leccio di Corno, Nostrale di Rigali and Ascolana Tenera. They all thrive in the cool, hilly terrain around Fermo. Growing local trees helps protect the region’s traditions and gives the oil its distinctive flavour.
Is your oil organic?
We use natural growing methods and avoid chemicals, and we’re working toward full organic certification. This process takes time because every part of the production chain must meet strict organic standards.
Why do you use ceramic bottles?
Light and heat can damage olive oil. Ceramic bottles shield the oil from light and help keep the temperature stable, protecting its flavour and quality. They can also be reused and refilled, reducing waste.
How should I store my olive oil at home?
Keep it somewhere cool and away from direct sunlight. Make sure the bottle is sealed when not in use. This helps preserve the oil’s freshness and flavour for longer.
Can I cook with extra virgin olive oil?
Yes. It keeps many of its benefits at high temperatures, but it also tastes excellent when used raw on vegetables, salads, bread or simple dishes like steamed potatoes, where its flavour really comes through.

Our extra virgin olive oil is produced in our mill in Le Marche. Other products are manufactured both locally and globally. We carefully select our manufacturing partners to ensure our products are high quality and a fair value.
